==Instructions== #Remove the leaves from the bunch, cut into bite-size pieces. #Blanch the leaves in salted water. #Shock in an ice bath, drain, squeeze out excess moisture. #In a large skillet, render the bacon until golden. #Add onions, garlic; sweat. #Add greens. #Deglaze with wine, reduce by half. #Add ham hock and stock. #Season with salt and pepper. #Braise in 350F oven 30 to 45 minutes. #Remove greens from the pan. #Reduce liquid. #Add liquid back to greens.
