==Ingredients== * A 9 inch pie crust * 4 large eggs or 5 small eggs * 1 cup milk * 4 oz goat cheese, crumbled or chopped * 1/2 cup sun dried tomatoes, drained and chopped * 3 cups packed fresh spinach spinach * 1 tsp minced garlic * olive oil * 1/4 tsp salt * 1/4 tsp pepper ==Instructions== # Butter pie dish well # Bake weighted pie crust at 175C for 10 minutes # Wilt the spinach on the stove with the olive oil and garlic # Whisk together the eggs, milk, salt, pepper # Mix the chopped sun dried tomatoes, spinach, and goat cheese into the egg mixture # Pour the egg mixture into the crust # Bake at 175C for 40 minutes
