==Yield== Makes 4. ==Ingredients== *1 diced green pepper *0.5 diced yellow onion *1 diced medium tomato *4 cups chicken broth *4 tbsp [[Chicken Consomme]] *2-3 avocados *1.5 cups jack cheese *8 corn tortillas *0.5 cups tomato sauce *2-3 chicken breasts *2 tbsp granulated garlic *1 tbsp white pepper *1 pinch dark chili powder *1 tbsp salt *cilantro ==Instructions== #Put chicken breasts in a pot and bring to a boil. #In another pot, add diced vegetables tomato sauce, and chicken broth (you can use the broth from the chicken you just boiled). #Add the chicken consomme, garlic, pepper, chili powder, and salt. Cook on medium for 15-20 minutes, until vegetables are tender. #Dice chicken breasts and add to soup. #Peel avocados and cut into slices. Grate the jack cheese and cut tortillas into strips. Fry strips until crispy. #Add avocado, cheese, tortilla, and cilantro to the soup as desired.
