*10 fl oz chicken stock&lt;br /&gt;
*salt, as needed&lt;br /&gt;
*ground black pepper, as needed&lt;br /&gt;

#Remove the leaves from the bunch, cut into bite-size pieces.&lt;br /&gt;
#Blanch the leaves in salted water.&lt;br /&gt;
#Shock in an ice bath, drain, squeeze out excess moisture.&lt;br /&gt;
#In a large skillet, render the bacon until golden.&lt;br /&gt;
#Add onions, garlic; sweat.&lt;br /&gt;
#Add greens.&lt;br /&gt;
#Deglaze with wine, reduce by half.&lt;br /&gt;
#Add ham hock and stock.&lt;br /&gt;
#Season with salt and pepper.&lt;br /&gt;
#Braise in 350F oven 30 to 45 minutes.&lt;br /&gt;
#Remove greens from the pan.&lt;br /&gt;
