Ingredients[edit]

  • 1.5 cups broccoli, chopped fine
  • 0.75 cups carrots, chopped fine
  • 1 tbsp butter
  • 0.25 cups chopped onion
  • 2 tbsp flour, divided
  • 2 cans chicken broth, divided
  • 2 tbsp dijon mustard
  • 0.5 cups light cream cheese
  • 1.5 cups shredded sharp cheddar cheese

Instructions[edit]

  1. Steam broccoli and carrots until soft
  2. Saute onions until translucent.
  3. Mix in 1 tbsp flour, whisk in 1 can chicken broth, add mustard and cream cheese.
  4. Whisk until smooth.
  5. Add second can of broth, stir, and simmer.
  6. Add broccoli and carrots.
  7. Add cheese and flour, stir until melted.
  8. Season with salt and pepper.
