Ingredients

  • 1 red onion
  • 1 bunch collard greens, de-stemmed and finely sliced
  • 1 15 oz can cannellini beans, drained and completely mashed
  • 2 tbsp butter
  • 1 dry salami stick, cut into small rectangles
  • 1 cloves garlic
  • 1 focaccia loaf, made into Garlic Croutons
  • 1 14oz container vegetable broth
  • parmesan
  • extra-virgin olive oil

Instructions

  1. Chop onion, saute with one clove garlic and sausage in butter for 5 minutes
  2. Add greens, cook down until soft - about 10-15 minutes.
  3. Add mashed beans and broth. Stir and then bring to a boil. Simmer for a few minutes.
  4. Season with lots of fresh pepper.
  5. Serve each bowl of soup on top of one focaccia crouton that has been drizzled with olive oil. Top each bowl with parmesan.
