Ingredients[edit]
- 1 red onion
- 1 bunch collard greens, de-stemmed and finely sliced
- 1 15 oz can cannellini beans, drained and completely mashed
- 2 tbsp butter
- 1 dry salami stick, cut into small rectangles
- 1 cloves garlic
- 1 focaccia loaf, made into Garlic Croutons
- 1 14oz container vegetable broth
- parmesan
- extra-virgin olive oil
Instructions[edit]
- Chop onion, saute with one clove garlic and sausage in butter for 5 minutes
- Add greens, cook down until soft - about 10-15 minutes.
- Add mashed beans and broth. Stir and then bring to a boil. Simmer for a few minutes.
- Season with lots of fresh pepper.
- Serve each bowl of soup on top of one focaccia crouton that has been drizzled with olive oil. Top each bowl with parmesan.
