Ingredients[edit]

  • 4 egg yolks
  • 0.70 cups confectioner's sugar
  • 2 tbsp rum or 1.5 tbsp brandy
  • 10 oz marscapone cheese
  • 2 egg whites
  • 2 oz granulated sugar
  • 0.75 heavy cream
  • 1.5 pkgs lady fingers
  • 1 cup strong coffee
  • cocoa powder

Instructions[edit]

  1. Beat egg yolks with confectioners sugar in double-broiler until thick and lemon-colored.
  2. Remove from heat. Add rum and cheese and whip until smooth.
  3. In separate bowl, whip egg whites with granulated sugar until stiff.
  4. In third bowl, whip cream to soft peaks. Alternately fold egg whites and cream into cheese mixture.
  5. Brush coffee onto both sides of lady fingers.
  6. Line the bottom of a dish with half of the lady fingers.
  7. Spread half of the cheese mixture on top. Sprinkle with cocoa powder.
  8. Top with remaining lady fingers. Spread with remaining cheese. Sprinkle with cocoa powder.
  9. Chill 3 to 4 hours.
