Ingredients

  • 1 tbsp olive oil
  • 0.5 medium sweet onions, diced
  • 0.5 red bell peppers, diced
  • 2 cloves garlic, minced
  • 28 oz crushed tomatoes
  • 2 15-oz cans kidney beans, drained and rinsed
  • 0.5 cups water
  • 1.5 tbsp chili powder
  • 1 tsp ground cumin
  • 0.5 tbsp pure maple syrup
  • 0.5 tbsp cocoa powder
  • 0.5 tsp smoked paprika
  • 0.75 tsp cayenne pepper
  • 0.25 tsp salt, or to taste

Instructions

  1. In a large pot over medium heat, add the olive oil.
  2. Add the chopped onion and bell pepper and sauté 3-4 minutes until translucent.
  3. Add in the garlic and cook 1 more minute, stirring constantly.
  4. Now add all the rest of the chili ingredients, and stir to combine. Bring to a boil, then lower the heat and simmer for about 20 minutes.
