Brandon's Beans

Lotsa beans
Ingredients
- 2 tablespoons oil
- 1 small/medium diced onion
- 2 cloves garlic
- 1 jalapeno
- Cumin / chili pepper / cayenne / paprika / oregano / salt / pepper
- 2 15-oz cans pinto beans, drained and rinsed
- Vegetable broth
- (Optional) Rotel tomatoes with green chilis
- (Optional) Cheddar or Mexican cheese
Instructions
- Heat oil in wide saute pan
- Add the beans to the pan
- Let beans cook 2-3min
- Add onions and spices. Onions should soften.
- Add enough broth to cover the beans about 1/2 inch
- Optionally add rotel
- Simmer 15-20 minutes
- Mash everything with a potato masher or immersion blender
- Optionally add cheese
