Vegan Black Bean Soup

Ingredients

  • 1 medium onion, diced
  • 2 cloves garlic, pressed
  • 1 red bell pepper, seeded & diced
  • 1 dried arbol, minced
  • 1 tsp cumin
  • 0.5 tsp dried oregano
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt
  • 3 15oz cans black beans, rinsed and drained
  • 1 14.5oz (~400g) can diced tomatoes
  • 3 cups low sodium vegetable broth

Instructions

  1. In a tall soup pot, saute onion and garlic in 0.25 cups water until soft, about 5-6 minutes
  2. Add peppers and saute 2-3 minutes until softening
  3. Add spices and saute 1 minute until fragrant
  4. Add beans, tomatoes, and broth. Simmer for 20 minutes.
  5. Blend with an immersion blender
