Vegan Black Bean Soup

Ingredients
- 1 medium onion, diced
- 2 cloves garlic, pressed
- 1 red bell pepper, seeded & diced
- 1 dried arbol, minced
- 1 tsp cumin
- 0.5 tsp dried oregano
- 0.5 tsp smoked paprika
- 0.5 tsp salt
- 3 15oz cans black beans, rinsed and drained
- 1 14.5oz (~400g) can diced tomatoes
- 3 cups low sodium vegetable broth
Instructions
- In a tall soup pot, saute onion and garlic in 0.25 cups water until soft, about 5-6 minutes
- Add peppers and saute 2-3 minutes until softening
- Add spices and saute 1 minute until fragrant
- Add beans, tomatoes, and broth. Simmer for 20 minutes.
- Blend with an immersion blender
