Yield

Ingredients

  • 2 filets
  • 2 cloves garlic
  • 0.75 oz rosemary
  • 4 tbsp butter
  • 2 tbsp peanut oil
  • 1 small yellow onion
  • salt, as needed
  • pepper, as needed
  • red wine, as needed
  • mushrooms (optional)

Instructions

  1. Season filets with salt and pepper on all sides.
  2. Heat pan to extremely hot on medium-high.
  3. Saute 2 tbsp butter, onions, and mushrooms in pan.
  4. Remove onions and mushrooms, place aside. Wipe pan with paper towel.
  5. Remove salt and pepper from steaks, blot dry.
  6. Place pan back on heat.
  7. Pour oil in pan, heat to extremely hot, add filets.
  8. Turn down heat after about 30 seconds, then cook on medium for 2 to 3 minutes for 1 inch steaks, or 4 to 6 minutes for 2 inch steaks.
  9. Turn filets over and add butter, garlic, and rosemary. Spoon butter over filets occasionally.
  10. Cook for 5 to 8 minutes for 1 inch steak, or 12 to 15 minutes for 2 inch steaks.
  11. Remove and plate steaks.
  12. Deglaze with wine, reduce by half. Add flour to thicken, serve sauce with steak.
