Chicken Broth

Makes 1 gallon.
Ingredients[edit]
- 6 lbs stewing hen
- 1 gal + 32 fl oz water
- salt, as needed
- 1 lb Mirepoix
- 1 Sachet d'Epices
- ground black pepper, as needed
Instructions[edit]
- Put the hen in the water in a big pot.
- Simmer for 3 to 5 hours, skimming the surface as necessary.
- Add the mirepoix and simmer for 30 minutes.
- Add the sachet to the broth and simmer for 30-40 minutes.
- Remove the hen from the broth when it is fully cooked and tender. Discard bones, skin, tendons.
- Taste and season if necessary.
- Strain through cheesecloth.
