Lotsa beans

Ingredients[edit]

  • 2 tablespoons oil
  • 1 small/medium diced onion
  • 2 cloves garlic
  • 1 jalapeno
  • Cumin / chili pepper / cayenne / paprika / oregano / salt / pepper
  • 2 15-oz cans pinto beans, drained and rinsed
  • Vegetable broth
  • (Optional) Rotel tomatoes with green chilis
  • (Optional) Cheddar or Mexican cheese

Instructions[edit]

  1. Heat oil in wide saute pan
  2. Add the beans to the pan
  3. Let beans cook 2-3min
  4. Add onions and spices. Onions should soften.
  5. Add enough broth to cover the beans about 1/2 inch
  6. Optionally add rotel
  7. Simmer 15-20 minutes
  8. Mash everything with a potato masher or immersion blender
  9. Optionally add cheese
