Tortilla Soup

Ingredients[edit]
- 1 diced green pepper
- 0.5 diced yellow onion
- 1 diced medium tomato
- 4 cups chicken broth
- 4 tbsp Chicken Consomme
- 2-3 avocados
- 1.5 cups jack cheese
- 8 corn tortillas
- 0.5 cups tomato sauce
- 2-3 chicken breasts
- 2 tbsp granulated garlic
- 1 tbsp white pepper
- 1 pinch dark chili powder
- 1 tbsp salt
- cilantro
Instructions[edit]
- Put chicken breasts in a pot and bring to a boil.
- In another pot, add diced vegetables tomato sauce, and chicken broth (you can use the broth from the chicken you just boiled).
- Add the chicken consomme, garlic, pepper, chili powder, and salt. Cook on medium for 15-20 minutes, until vegetables are tender.
- Dice chicken breasts and add to soup.
- Peel avocados and cut into slices. Grate the jack cheese and cut tortillas into strips. Fry strips until crispy.
- Add avocado, cheese, tortilla, and cilantro to the soup as desired.
