Broccoli Cheese Soup

Ingredients[edit]
- 1.5 cups broccoli, chopped fine
- 0.75 cups carrots, chopped fine
- 1 tbsp butter
- 0.25 cups chopped onion
- 2 tbsp flour, divided
- 2 cans chicken broth, divided
- 2 tbsp dijon mustard
- 0.5 cups light cream cheese
- 1.5 cups shredded sharp cheddar cheese
Instructions[edit]
- Steam broccoli and carrots until soft
- Saute onions until translucent.
- Mix in 1 tbsp flour, whisk in 1 can chicken broth, add mustard and cream cheese.
- Whisk until smooth.
- Add second can of broth, stir, and simmer.
- Add broccoli and carrots.
- Add cheese and flour, stir until melted.
- Season with salt and pepper.
