Dirty Rice

Ingredients[edit]
- 1 tbsp olive oil
- 1 cup of chopped onion (about 1 onion)
- 2 celery stalks, finely chopped
- 1 green bell pepper, finely chopped
- 4 cloves garlic, minced
- 2 tsp Cajun seasoning
- 1 cup of cooked rice
- 1/3 cup vegetable broth or stock
- salt and pepper to taste
Instructions[edit]
- Heat olive oil in large skillet over medium heat.
- Add onion, bell pepper, and celery. Simmer until the onions are transluscent, 5 to 10 mins.
- Reduce the heat to low.
- Add the garlic and Cajun spice. Mix well and cook for another 3-4 mins.
- Add the rice and vegetable broth to the skillet, gently mixing. Continue to cook for 2-3 mins.
- Add salt and pepper to taste.
