Ingredients[edit]

  • 3 small or one large onion, diced
  • 2 cloves garlic, crushed
  • 1 tsp Madras Curry powder
  • 4 cups Veg broth
  • 2 cans pure pumpkin puree
  • 2-4 cups water to taste as the soup cooks.
  • 4 apples, peeled, core and cut into small pieces
  • 4 large carrots, peeled cut into chunks
  • Salt and pepper
  • Cream

Instructions[edit]

  1. Saute onions and garlic. Add curry and saute a little more.
  2. Add the broth and pumpkin.
  3. Add the apples and carrots and enough water to cover.
  4. Boil and then simmer until apples and carrots mushy.
  5. Using a hand blender, puree.
  6. Add more water if needed.
  7. Simmer.
  8. Salt and pepper to taste.
  9. Before serving add cream to taste and maybe more curry.
