Mary's Pumpkin Soup

Ingredients[edit]
- 3 small or one large onion, diced
- 2 cloves garlic, crushed
- 1 tsp Madras Curry powder
- 4 cups Veg broth
- 2 cans pure pumpkin puree
- 2-4 cups water to taste as the soup cooks.
- 4 apples, peeled, core and cut into small pieces
- 4 large carrots, peeled cut into chunks
- Salt and pepper
- Cream
Instructions[edit]
- Saute onions and garlic. Add curry and saute a little more.
- Add the broth and pumpkin.
- Add the apples and carrots and enough water to cover.
- Boil and then simmer until apples and carrots mushy.
- Using a hand blender, puree.
- Add more water if needed.
- Simmer.
- Salt and pepper to taste.
- Before serving add cream to taste and maybe more curry.
