Halibut[edit]

Ingredients[edit]

  • 1 full Halibut steak - about 1.125 lbs total.
  • 1 tbsp olive oil
  • salt and pepper

Instructions[edit]

  1. Preheat oven to 425
  2. Sprinkle Halibut generously with salt and pepper
  3. Heat oil on an oven-proof pan on the stove until it smokes
  4. Sear the steak on one side without moving for 4 minutes
  5. Flip the steak and immediately put the pan in the oven
  6. Wait 9 minutes and remove

Chipotle-Garlic Butter with Lime and Cilantro[edit]

Ingredients[edit]

  • 2 tbsp butter, softened
  • half of a medium chipotle chile in adobo sauce
  • 0.5 tsp adobo sauce
  • 1 small garlic glove, minced
  • 0.5 tsp honey
  • 0.5 tsp zest of half a lime
  • 1 tsp cilantro leaves
  • 0.25 tsp salt

Instructions[edit]

  1. Just mix it all together with a fork
  2. Put it on the fish
