Braised Greens

Ingredients[edit]
- 4 lbs collard greens
- 4 oz minced bacon
- 8 oz minced onions
- 3 minced garlic cloves
- 5 fl oz white wine
- 1 ham hock
- 10 fl oz chicken stock
- salt, as needed
- ground black pepper, as needed
Instructions[edit]
- Remove the leaves from the bunch, cut into bite-size pieces.
- Blanch the leaves in salted water.
- Shock in an ice bath, drain, squeeze out excess moisture.
- In a large skillet, render the bacon until golden.
- Add onions, garlic; sweat.
- Add greens.
- Deglaze with wine, reduce by half.
- Add ham hock and stock.
- Season with salt and pepper.
- Braise in 350F oven 30 to 45 minutes.
- Remove greens from the pan.
- Reduce liquid.
- Add liquid back to greens.
