Makes 10 servings

Ingredients[edit]

  • 4 lbs collard greens
  • 4 oz minced bacon
  • 8 oz minced onions
  • 3 minced garlic cloves
  • 5 fl oz white wine
  • 1 ham hock
  • 10 fl oz chicken stock
  • salt, as needed
  • ground black pepper, as needed

Instructions[edit]

  1. Remove the leaves from the bunch, cut into bite-size pieces.
  2. Blanch the leaves in salted water.
  3. Shock in an ice bath, drain, squeeze out excess moisture.
  4. In a large skillet, render the bacon until golden.
  5. Add onions, garlic; sweat.
  6. Add greens.
  7. Deglaze with wine, reduce by half.
  8. Add ham hock and stock.
  9. Season with salt and pepper.
  10. Braise in 350F oven 30 to 45 minutes.
  11. Remove greens from the pan.
  12. Reduce liquid.
  13. Add liquid back to greens.
