Raspberry Coulis

Ingredients
- 2 lb raspberries, fresh or frozen
- 8 oz sugar
- 1 fl oz lemon juice
Instructions
- Combine raspberries, sugar, and lemon juice in a saucepan over medium.
- Simmer, stirring, until sugar is dissolved - about 10 minutes.
- Strain.
- Add additional sugar and lemon juice as needed.
