Caramelized Onion and Goat Cheese Quiche

Ingredients[edit]
- A 9 inch pie crust
- Butter
- 3 onions, sliced
- 200g goat cheese
- 6 eggs
- 175ml milk
- salt & pepper
Instructions[edit]
- Caramelize onions on low heat in lots of butter for about 40-60 minutes, stirring every 10 minutes for the first half and every 5 minutes for the second half. While this is going, continue down to prep the crust.
- Butter pie dish well
- Bake weighted pie crust at 175C for 10 minutes
- Drain onions and arrange them in pie crust and top with cheese
- Whisk together eggs, milk, salt, pepper.
- Pour egg mixture into crust
- Bake at 175C for 40 minutes
