Sun Dried Tomato and Goat Cheese Quiche

Ingredients[edit]
- A 9 inch pie crust
- 4 large eggs or 5 small eggs
- 1 cup milk
- 4 oz goat cheese, crumbled or chopped
- 1/2 cup sun dried tomatoes, drained and chopped
- 3 cups packed fresh spinach spinach
- 1 tsp minced garlic
- olive oil
- 1/4 tsp salt
- 1/4 tsp pepper
Instructions[edit]
- Butter pie dish well
- Bake weighted pie crust at 175C for 10 minutes
- Wilt the spinach on the stove with the olive oil and garlic
- Whisk together the eggs, milk, salt, pepper
- Mix the chopped sun dried tomatoes, spinach, and goat cheese into the egg mixture
- Pour the egg mixture into the crust
- Bake at 175C for 40 minutes
