Spanakopita

Ingredients[edit]
- 2 10-oz packages frozen chopped spinach, defrosted and squeezed dry
- 4 eggs
- 8 oz feta cheese, crumbled
- 1 bunch green onions, chopped
- 1 cup chopped parsley
- 1 tablespoon dried dill
- Soft or melted butter
- Phyllo dough
Instructions[edit]
- Mix together first 6 ingredients in large bowl.
- Butter 16x9 baking dish.
- Unwrap phyllo dough and lay it on wax paper, cover it with plastic wrap and cover that with a damp towel. Each time you remove pieces of phyllo, cover the remaining phyllo with the plastic and damp towel or it will dry before you finish.
- Place a couple sheets of phyllo in the bottom of the pan, then brush gently with butter.
- Put on a couple more sheets and brush with butter again. Repeat until you've used 2/3 of the phyllo.
- Spread the filling over the phyllo.
- Again begin to put a couple sheets of phyllo, brush on butter, and repeat until you've used it up.
- Bake at 400 F for 25-30 minutes or until golden brown.
