Yield

Make 32 fl oz

Ingredients

  • 1.5 oz minced shallots
  • 2 oz butter
  • 2 lbs sliced white mushrooms
  • 7.5 fl oz dry white wine
  • 32 fl oz Demi-Glace
  • salt, as needed
  • black pepper, as needed

Instructions

  1. Sweat shallots over medium.
  2. Add mushrooms, saute until juices cooked away.
  3. Add wine, deglaze, reduce.
  4. Add demi-glace. Simmer for 5 minutes.
  5. Season with salt and pepper.
