Mushroom Sauce

Ingredients
- 1.5 oz minced shallots
- 2 oz butter
- 2 lbs sliced white mushrooms
- 7.5 fl oz dry white wine
- 32 fl oz Demi-Glace
- salt, as needed
- black pepper, as needed
Instructions
- Sweat shallots over medium.
- Add mushrooms, saute until juices cooked away.
- Add wine, deglaze, reduce.
- Add demi-glace. Simmer for 5 minutes.
- Season with salt and pepper.
