Make 8 fl oz

Ingredients[edit]

  • 0.375 oz minced shallots
  • 0.5 oz butter
  • 0.5 lbs sliced white mushrooms
  • 1 fl oz (0.125 cups) dry white wine or Mac_and_Jack's
  • 8 fl oz (1 cup) Demi-Glace
  • salt, as needed
  • black pepper, as needed

Instructions[edit]

  1. Sweat shallots over medium.
  2. Add mushrooms, saute until juices cooked away.
  3. Add wine, deglaze, reduce.
  4. Add demi-glace. Simmer for 5 minutes.
  5. Season with salt and pepper.
