Beurre Blanc

Ingredients[edit]
- 0.5 tbsp minced shallot
- 2 black peppercorns
- 2 oz dry white wine
- 0.5oz lemon juice
- 0.75oz apple cider vinegar
- 2oz heavy cream
- 1.25 sticks butter
- salt and pepper
Instructions[edit]
- Reduce heavy cream by half and set aside
- Reduce shallots, peppercorns, wine, lemon juice, and vinegar in saucepan over medium-high until nearly dry
- Add reduced heavy cream and simmer 2-3 minutes
- Add butter a bit at a time, whisking constantly, over quite low heat
- Season with salt and pepper
