Beurre Blanc

Ingredients[edit]

  • 0.5 tbsp minced shallot
  • 2 black peppercorns
  • 2 oz dry white wine
  • 0.5oz lemon juice
  • 0.75oz apple cider vinegar
  • 2oz heavy cream
  • 1.25 sticks butter
  • salt and pepper

Instructions[edit]

  1. Reduce heavy cream by half and set aside
  2. Reduce shallots, peppercorns, wine, lemon juice, and vinegar in saucepan over medium-high until nearly dry
  3. Add reduced heavy cream and simmer 2-3 minutes
  4. Add butter a bit at a time, whisking constantly, over quite low heat
  5. Season with salt and pepper
