Poached Sea Bass

Ingredients

  • Some butter
  • Sea bass filets
  • 4oz dry white wine
  • 5oz vegetable stock
  • 5oz clam juice

Instructions

  1. Pre-heat oven to 350F
  2. Butter an oven-safe pan
  3. Add the fish, wine, stock, juice to the pan
  4. Heat on the stove until almost simmering
  5. Cover the pan with parchment paper and transfer the pan to the oven
  6. Cook for 12-30 minutes, depending on thickness
