Poached Sea Bass

Ingredients[edit]
- Some butter
- Sea bass filets
- 4oz dry white wine
- 5oz vegetable stock
- 5oz clam juice
Instructions[edit]
- Pre-heat oven to 375F
- Butter an oven-safe pan
- Add the fish, wine, stock, juice to the pan
- Heat on the stove until almost simmering
- Cover the pan with parchment paper and transfer the pan to the oven
- Cook for 12-30 minutes, depending on thickness
