  1. Shape the dough. Let it rest, covered, for 15 to 20 minutes.
  2. Knead the dough.
  3. Place the dough, seam down, on baking surface. Let it rest, covered, for 30 to 45 minutes.
  4. Score the dough.
  5. Bake at 475F until golden brown - 15 to 20 minutes.
  6. Egg the bread if desired.
  7. Continue baking 5 minutes.
