Candied Sweet Potatoes

Ingredients[edit]

  • 6 large bright orange sweet potatoes
  • 1 pound dark brown sugar
  • 1 stick butter
  • 2 cups mini marshmallows
  • 0.25 cups white sugar
  • 2 tsp salt

Instructions[edit]

  1. Wash and peel potatoes. Chunk into 2-inch disks.
  2. Put potatoes in a pan and cover with water. Add salt and white sugar.
  3. Cover and boil until potatoes are fork tender - about 30 minutes. Drain.
  4. Put potatoes in a baking dish and sprinkle with brown sugar. Dot potatoes with butter.
  5. Bake for 20 minutes at 350F.
  6. Sprinkle with marshmallows.
  7. Return to oven, bake until marshmallows are brown.
