Yield[edit]

6 flatbreads

Ingredients[edit]

  • 1.5 cups flour
  • 1 tsp baking powder
  • 0.75 tsp salt
  • 1.5 tbsp olive oil
  • 0.5 cup ice water
  • 1-2 tbsp butter, additional for frying

Instructions[edit]

  1. Place the flour, baking powder, and salt in a large mixing bowl and stir to combine.
  2. Add the oil and ice water, and mix to make a soft, cohesive dough. Adjust with flour or water as needed. The dough should be moist but not sticky.
  3. Cover with plastic wrap, and let rest for 10 minutes.
  4. Preheat a skillet on the stovetop on medium low. Add 1 tbsp butter and heat until it's melted.
  5. Divide the dough into 6 equal pieces.
  6. Flatten the pieces by hand until they are about 1/4" thick or less.
  7. In batches, fry the flatbreads on the skillet for 2 to 3 minutes, or until golden brown. Flip and fry on the second side for another 2 minutes. Transfer from the pan to a plate or other surface. Add more butter as needed for frying successive batches.
