Makes 10 servings.

Ingredients[edit]

  • 4 lbs potatoes
  • 2 fl oz butter or fat
  • salt, as needed
  • ground black pepper, as needed
  • 2 tbsp chopped parsley

Instructions[edit]

  1. Scrub and peel potatoes.
  2. Boil potatoes 15 to 20 minutes.
  3. Drain potatoes.
  4. Dry potatoes by cooking in 300F oven for 5 minutes.
  5. Heat fat on medium-high frying pan.
  6. Grate potatoes and add to pan.
  7. Add seasoning.
  8. Saute until done.
  9. Add parsley and serve.
