Ingredients

  • 4 small beets, scrubbed and destemmed
  • Baby spinach
  • Crumbled chevre
  • Candied pecans
  • Reduced balsamic

Instructions

  1. Oil beets with olive oil; salt and pepper.
  2. Roast at 450 for 40 minutes in an oven pan
  3. Chill for 15 minutes in fridge
  4. Peel and dice beets
  5. Toss with other ingredients
